French toast

Makes about 3-4 french toasts

Ingredients

  • 100g whole milk
  • 400g heavy cream
  • 50g egg yolks (about 3 large yolks)
  • 25g sugar
  • 3-4 thick slices day-old brioche
  • Butter for cooking
  • Any Au pralin spread: for the magic

Instructions

Step 1: Create the custard

Whisk together the milk, cream, egg yolks, and sugar in a large bowl until completely smooth.

Step 2: The overnight soak

Submerge your brioche slices in the custard mixture and let them soak overnight in the fridge.

Step 3: The perfect cook

Heat a little butter in your pan and cook the soaked brioche until golden. The magic happens when you transfer them to the oven – they'll puff up beautifully as they finish cooking.
